Though Barbados is known as the original cultivator of Caribbean sugarcane Trinidad also holds a rich history of its production. Starting in 1627, after a few decades the demand for rum crafted from the island sugarcane soared. At the time, rum was well-loved by islanders and sailors, but it was only upon the return of many who offered up rum as a gift that it became wildly popular on the old European continent. Though the demand for sugar has lessened, distillers continue to produce rum on the island using traditional methods. Using a special fermentation process, the rum from the islands is distinctly rich and flavorful. Plantation Rum Trinidad 2009 is an exclusive, limited edition rum crafted from just 24 casks chosen from the cellars of Trinidad Distiller by Plantation Rum’s Master Blender Alexandre Gabriel and General Manager and rum historian at West Indies Rum Distillery Andrew Hassek. This rum was distilled in multi-column stills and uniquely matured using a process inspired by a 300-year-old technique called double aging. After first maturing for 11 years in 200-liter ex-bourbon casks in a cool, red brick cellar, the rum is finished for one year in 400-liter French oak barrels from Maison Ferrand in the Charente region of France. The aroma of Trinidad 2009 rum is filled with notes of vanilla, caramel, fruits, coffee and tonka beans alongside floral, nutty and spicy notes. The palate is well structured with notes of sweet baked goods, leading into a finish with notes of almond, orgeat, citrus and fruits. Sweet, floral and fruity, this Caribbean style rum is wonderful as an aperitif or in a classic cocktail such as a Mai Tai.
