Description

Joseph Drouhin sources this wine from the vineyards of the appellation of Puligny-Montrachet in the Côte des Blancs. First made famous by the Montrachet Grand Cru vineyard, Puligny is said to have been the property of Pullius during the time of the Roman Empire. The soil is a mix of limestone and pebbles, making an excellent area for the chardonnay vines to develop and thrive. Drouhin presses this puligny slowly in order to ensure the fruit's finest qualities, and does not use the juice from the final pressings. This wine ferments for twelve months in 25% new oak barrels sourced from French forests. The wood for the barrels is weathered under strictly controlled conditions in order to ensure the elegant quality of the wine. While aging, the development is inspected and tasted so that the result is of the finest representations of the land and year. The result is a pure, distinguished, light gold-white fine wine. The aromas are lightly botanical and reminiscent of sweet white peaches. The palate is silky with a light nuttiness and notes of fruit. The finish is long with intense flavors carrying over alongside floral notes. For pairing, the team at CWS suggests smoked salmon and asparagus or a black truffles soup.
